Before buying anything new, look into your fridge to see what leftovers lie there. Leftover veggies can easily be utilized and become your next meal.

Plus you are creating a whole new dish and recipe with your own choice of leftover veggies.

Making something from scraps is really easy:

  • Collect your leafy vegetables and one potato.
  • Chop up the leafy vegetables and dice the potatoes.
  • In a pan, add a couple spoons of oil and fry the potatoes. Sprinkle in some salt.
  • Once the potatoes are golden brown, add your chopped up leafy vegetables.
  • Add some spices of your choice, like chilli powder, sesame seeds, turmeric, and black pepper. Add salt according to taste.
  • Cook until the leaves have reduced. Now it’s ready to eat with rice or naan bites!
